About the Recipe

Ingredients

• 1 x 320g pack Jus Rol ready rolled puff pastry

• 2 tbsp olive oil

• 3 sweet onions, halved and finely sliced

• 2 large red onions, halved and finely sliced

• 3 medium leeks, trimmed and finely sliced

• 1 tsp light brown soft sugar

• 4 thyme sprigs, leaves stripped

• 12 pitted black olives


Preparation

1. Cook onions and leeks in oil with salt until soft. Cover for 25 mins, stirring now and then.

2. Add sugar and thyme. Cook uncovered until caramelised and jammy. Preheat oven to 190°C fan.

3. Spread onion mix over pastry centre. Add olives. Bake for 20–25 mins until puffed.

4. Cool slightly. Top with thyme and rocket. Serve warm or cold.
